Potatoes are
a very popular vegetable throughout India. They are eaten by themselves
or combined wirth other vegetables like cauliflower, cabbage, capsicum,

flowwing recipes are all for dry potaato dishes to be eaten with
any curry or lentil dish.
POTATOES
GUJRATI - STYLE

2oz (500g) potatoes |

white, washed urad dal |

Boil
the potatoes in their skins with the turmeric powder and 1 teaspoon
salt. When 90 per cent done, drain, cool and peel. Cut into small
pieces.

Heat the oil in a wok, add the mustard seeds and urad dal. After
10 seconds add the curry leaves and chilli powder. After 5 seconds
add a little water and cook for 3 minutes, then add the sugar, annd
an additional seasoning of a little salt.

Toss the potatoes in this mixture and cook for a few minutes until
they are done and heated through and have absorbed some of the oil.
POTATOES
WITH FENUGREEK LEAVES
ALOO METHI (PUNJAB
AND SINDH)

(250g) potatoes, preferably small |

green chilli, chopped (sooaa) |

cup fenugreek leaves |

teaspoon turmeric powder |

stalks of fresh dill, chopped |

tablespoons oil |

tablespoon chopped coriander leaves |

garlic cloves, chopped |

1 If not using the very small potatoes, peel
and cut into bite-sized pieves. Small potatoes can be left whole
with the skins on.
2 Soak the fenugreek leaves in a bowl of water with a pinch
of salf for half an hour. This will remove the slightly bitter taste.
Then drain and chop.
3 Heat the oil in a large frying pan or wok. Add the garlic
and chilli. After a few seconds add the fenugreek leaves and fry
for 1 minute.
4 Add the potatoes, turmeric powder and salt and stir-fry
for 2 minutes, then add the dill and coriander leaves.
5 Cover, turn the heat to very low and leave to cook for
15 mnutes or until the potatoes are done. If necessary sprinkle
just a llittle water. |
