| Ground Ginger, Ground Turmeric, Curry
Powder, Ground Celery & Ground Cumin |
| Ground Ginger is made from the clean, dried rhizomes
of the plant Zingiber officinale. The product which has a strong
lemon aroma and a pungent taste, is normally ground to a USS
# 35 and has a volatile oil content of 1% (min). Ground Turmeric
(Alleppey & Madras) is made from the clean and dried rhizomes
of the plant Curcuma longa. The product is a yellow to orange-yellow
powder with a spicy aroma and a bitter pungent flavour. Normally
ground to a granulation of USS # 60 it has a curcumin content
between 2% and 5.5%. The product is normally packed in poly-lined
burlap or paper bags of 25 kgs (55 lbs). Curry Powder is a blend
of various spices made to match the visual and flavour profiles
that the customer requires. |

| Crushed & Ground Red Chillies |

Made from the dried, ripe and mature fruit of
the plant Capsicum annum. The product is red to red-orange in
colour with biting hot flavour and a pungent aroma. The pungency
level of the product typically falls between 25,000 and 50,000
Scoville Heat Units. The granulation for the ground product
ranges from USS # 25 to USS # 40 and for the crushed product
between USS # 6 and USS # 25. Packaging is usually in poly-lined
burlap or paper bags of 25 kgs (55 lbs). All these specifications
can be tailored to suit the customer requirement including pungency
and colour (through selection and blending). Sterilisation (Ethylene
oxide) can be done if required. |

| Whole, Crushed and Ground Black Pepper |

Whole black pepper : The whole, dried, mature berries of the
plant Piper nigrum. The berries are black to dark brown in colour
with a hot, biting and pungent taste and a sharp and penetrating
odour.
The finished product is clean, washed and mechanically dried
and packed in burlap bags of 50 kgs (110 lbs). Moisture will
be below 12% and light berries below 4%. Sterilisation (Steam
or Ethylene Oxide) can be done at the option of the customer.
The material can be processed and packaged to suit customer
requirement. |

Crushed and Ground black pepper |

Made from the mature, dried and clean berries of the plant
Piper nigrum. The product is black-grey in colour with a hot
pungent biting taste and sharp penetrating aroma. It is normally
processed to a mesh size ranging from USS # 12 to USS # 35.
Moisture will be around 12% and volatile oil 1% (min). The product
is normally packed in poly lined burlap or paper bags of 25
kgs (55 lbs). |
